Beef Stew
Mi gente, this one’s a little throwback from 2022 but trust me — it’s way too good not to share again! @chefrosiebatistaThe weather’s getting chilly fast, and nothing hits like a hearty beef stew that warms you from the inside out. This is one of those comfort meals that fills the whole house with the best smell and brings everyone to the table. Would you serve yours with rice or a piece of crusty bread to soak up that sauce? Beef stew Ingredients:2 lbs chuck roast 2 tbsp beef bouillon, divided 1/2 tbsp onion powder 1/2 tbsp garlic powder 1 tsp black pepper 1 tbsp all purpose flour 2 tbsp oil 1/2 white onion, diced 1 celery stalk, diced 4-5 garlic cloves 2 tbsp tomato paste 32 oz beef broth 1 cup red wine 4-5 dried bay leaves 2 fresh rosemary sprigs 2 cups of water, or as needed 2 russet potatoes, peeled & diced 1 large carrot, peeled & diced Beef Stew Instructions 1. Season & coat the beef: In a bowl, toss the cut up chuck roast with 1 tbsp beef bouillon, onion powder, garlic powder, black pepper, and flour until evenly coated. 2. Sear the meat: Heat the oil in a large heavy pot over medium-high heat. Sear the beef on all sides until browned, 3-4 minutes. Remove and set aside. 3. Sauté aromatics: In the same pot on medium heat, add the onion, celery, and garlic cloves. Cook, stirring often, for 2–3 minutes, until fragrant and softened. 4. Add tomato paste & deglaze: Stir in the tomato paste, and cook, stirring constantly, for 1 minute. Pour in the broth and red wine, scraping the bottom of the pot to release all that flavor. 5. Build the broth: Return the beef to the pot. Add the remaining 1 tbsp beef bouillon, bay leaves, rosemary, and water as needed to cover the meat. Bring to a simmer over medium-low heat. 6. Slow cook: Reduce heat to low, cover, and let it simmer gently for 1½–2 hours, stirring occasionally, until the beef is tender. 7. Add veggies: Stir in the potatoes and carrots. Cook on the stovetop over medium-low heat, uncovered, for 30–40 minutes, until vegetables are soft and the stew is thickened. 8. Final touch: Remove bay leaves and rosemary sprigs.
