Watch it on Hulu here: http://hulu.com/series/next-level-chef​*RECIPE*Pancakes 1 ½ cups all purpose flour2 tablespoons superfine sugar1 tablespoon baking powder1 teaspoon baking sodaPinch salt1 cup ricotta cheese4 large eggsFinely grated zest of 1 orange1 cup orange juice1 stick butter Syrup½ cup maple syrup2 oranges, segmentedFinely grated zest of 1 orange½ teaspoon cinnamon Serving1 cup natural yogurtPROCEDURECombine the dry ingredients in a large bowl and make a well in the center. In a separate bowl or jug, whisk the ricotta, eggs and zest together until smooth. Gradually whisk in the orange juice then pour into the dry ingredients and whisk to a smooth batter; take care not to over-mix.Heat a little butter in a non-stick skillet over a medium heat then add large spoonfuls of the batter, leaving space between each. Cook for 2 minutes until bubble start to form on the surface, and the undersides are golden. Flip the pancakes and cook for a further 1 to 1 ½ minutes. Transfer to a baking sheet and keep warm. Repeat with the remaining batter.Heat the maple syrup, orange segments, orange zest and cinnamon in a small saucepan over a medium heat. Heat gently for 5 minutes to infuse the syrup.Serve the pancakes with the syrup and a spoonful of yogurt.
