Ina Garten’s Banana Crunch Muffins Are Packed With Superfoods That Provide the Perfect Soft & Crispy Texture

If you’re the type of person who loves a pastry for breakfast, then you probably contend with the mid-morning munchies. Pastries are delicious to enjoy with your morning coffee or tea, but rarely do they keep you satiated until lunchtime. Ina Garten‘s Banana Crunch Muffins are here to rescue you. Not only do they give you that pop of sweetness you crave in the morning, but they’re packed with superfoods that will keep you full for hours. And, of course, it doesn’t hurt that they’re utterly delicious, too.

Garten’s muffins start with the basic ingredients of flour, sugar, baking powder, baking soda, and salt, all sifted into a large bowl and added into the bowl of a stand mixer. Next up, Garten combines eggs, milk, vanilla, and cooled melted butter, and adds those slowly into the dry ingredients while the mixer is on a low speed.

Place the batter in the fridge to chill, and mash up about two ripe bananas using a fork and dice a third banana to give your muffins some added texture. When your batter comes out of the fridge, add the banana to the mixture, as well as some granola (homemade granola is best!), diced walnuts, and shredded coconut.

Line a muffin tin with paper liners and brush the top of the pan with a bit of oil so the muffin tops don’t stick, and ladle your muffin batter into each cup. Garten likes to top each muffin with dried banana chips, but you can skip this step or swap the chips out for more walnuts or coconut. Toss the muffins into the oven and when they’re fully cooked, you’ll be left with a delicious tray of sweet and superfood-packed breakfasts for the week!
