Ina Garten Makes This 3-Ingredient Chicken Recipe When She’s ‘Too Tired to Cook’ & It Comes Together in Just 10 Minutes
Ina Garten has always had a way of making delicious meals easy and attainable for at-home chefs of any skill level, but this three-ingredient chicken dish might just be the easiest recipe she’s ever come up with (and she agrees!). It’s the meal she makes when she’s too tired to cook, but the flavors are still just as bright and complex as some of her more intricate dishes. It’s a must-know for those who love to keep easy dinners in their back pocket.
“Everyone needs a few dishes you can assemble in 10 minutes, then throw in the oven for 30 to 40 minutes while you drink a glass of wine,” Garten wrote in an Instagram caption. “This is one of my favorite recipes for when I’m too tired to cook but really want a hot meal!”
She continued in the video she posted, “This is the easiest dinner I know how to make. It’s chicken breast with goat cheese and basil.”
This dish revolves around boneless chicken breasts with the skin still on. Garten likes to pat the chicken breasts dry, and she then separates the skin from the breast to create a small pocket for her goat cheese slices. Garten chose an herbed goat cheese, but you can go with whatever flavor of goat cheese you like best. Slice fairly thin rounds of the cheese and place them under the skin of the chicken breast. Top each cheese round with a basil leaf, and tuck everything.
Drizzle the top of each chicken breast with olive oil and sprinkle with salt and pepper, and then toss them into the oven to bake. When the internal temperature of the chicken reaches about 155 to 160 degrees, take it out and cover it with aluminum foil so it continues cooking for an additional 10 minutes until it reaches 165 degrees.

If you can’t find boneless chicken breasts with the skin still on them, you can opt for thighs, which usually still have the bones in them. You may just have to adjust your cooking times to ensure the chicken doesn’t get too dry.
