Let me direct your attention to FYSH, a one-of-a-kind modern-day “fish steakhouse” that features ethically sourced seafood and fish dishes.

Housed at The Singapore EDITION in Orchard, it is the brainchild of multi-award-winning chef, restaurateur, and author Josh Niland, a pioneer of “whole fish cookery” — you may have seen him on MasterChef Australia.

In keeping with Australia’s favourite weekend tradition, the restaurant has unveiled a special FYSH Roast available only on Sundays with a fish-focused menu designed for sharing. Think a balance of innovative fish, seafood, and meat dishes, with the majority cooked over a charcoal grill.

Before the meal commences, you’ll be greeted with a welcome sight: the FYSH Trolley, showcasing the cuts of the day.

Each diner will then be served a selection of bread and starters like the signature FYSH Egg Tart with trout roe; and the XO sauce-slicked Abrolhos Island Scallop.

If you’re a fan of curry puffs, you’ll probably like the flaky Swordfish Empanadas, with a savoury and mildly-sweet spiced filling that paired oh-so well with the accompanying roast garlic yoghurt.

My dining partners and I also really enjoyed the Charcoal Grilled Slipper Lobster, comprising succulent, fresh-tasting meat seasoned simply with vadouvan (an Indian-inspired blend of spices with French origins) and a squeeze of lime.

Afterwards, move on to the main courses that you can enjoy as individual portions or for sharing across the table.

If you’d rather order a variety of different dishes to share, go for one of the individual courses, like the Mooloolaba Swordfish Schnitzel, Wagyu Beef Chuck Rib, or Yellowfin Tuna Fillet Steak.

There’s also a vegetarian option that looks almost too good to eat: the Flowering Zucchini & Pecorino Pie stuffed with grilled peppers, saffron, basil, and oozy melty cheese.

As for sharing plates, those who must have their meat can go for the Roasted & Glazed Free-Range Duck with chickpea and fennel seed panisse (a sort of fritter); sweet and sour radicchio; juicy, wickedly caramelised BBQ white peaches; and to top it all off, a hazelnut duck sauce.

But in sticking to the whole “fish” theme, I’d recommend the Butterflied Acquna Murray Cod, which boasts mild and clean-tasting flesh with a buttery texture, and the best part, super crispy skin.

It’s even served with grilled padron peppers and pressed roast potatoes on a bed of BBQ tomato chimichurri, alongside garlic aïoli, herbs and shallot vinaigrette, and a crunchy green leaves salad.

Otherwise, order the FYSH Signature (for four pax) for the entire table, starring three different cuts of Dry-Aged Mooloolaba Yellowfin Tuna — merguez sausage, rib-eye steak, and glazed skirt steak.

It is paired with accompaniments like Café de Paris butter, harissa, chimichurri, and even a tuna bone sauce, so feel free to try different combinations, mix-and-match, and go crazy!

But that’s not all, as you’ll also get to snack on Kombu Fries, Salad of Ox Heart Tomato & Stone Fruit, and our favourite of the lot, addictive Salt & Vinegar Onion Rings with a shatteringly crispy batter.

Keep an eye out for the Dessert Trolley that’ll be rolled out to each table at the end of the meal, and take your pick from a rotating menu of sweet treats like the Trifle of Red Fruits with rose cream, rose jelly, and coconut; Apple Tarte Tatin; and Tarte Tropézienne.

Don’t miss out on the unique Chocolate & Caramel Tart, which incorporates actual murray cod fat; it’s an ultra-decadent dessert paired with a celeriac cream.

The FYSH Roast experience is priced at S$108++ per person and can be enjoyed every Sunday from 12pm to 2.30pm.

If you’d like to elevate the experience by making it a boozy brunch, you can opt for the Australian Bubbles (S$88++) or the Flowing Champagne package (S$118++) for free-flow bubbly.

Both packages are also inclusive of coffee, tea, juices, soft drinks, selected wines, spirits and cocktails — you won’t go wrong with the classic Espresso Martini or FYSH Bloody Mary.
