This National Day, InterContinental Singapore invites you to uncover the local culinary influences that the hotel has to offer – from a theatrical afternoon tea at The Lobby Lounge to an exquisite gastronomic experience at Man Fu Yuan. From 6 to 9 August 2022, The Lobby Lounge presents the National Day Afternoon Tea - a symphony of locally inspired delicacies specially curated by Executive Pastry Chef Desmond Lee in celebration of the nation’s melting pot of culture.
The four-day affair will highlight local flavours including the Bandung Raspberry Lychee, a tangy creation with Raspberry and Lychee Marmalade topped with a Rose Bavarois Cream; an elevated Peanut Toast - a classic Banana Cake taken up a notch with fragrant Caramelised Peanut with Praline; the Laksa Prawn Quiche and Kani Crab Cake that packs a punch of Umami with Miso Aioli and Scallions “Kani”.
The National Day Afternoon Tea includes a theatrical experience at the Live Chendol Station, where unlimited servings of Chendol Ice Cream made with Coconut Espuma Nitrogen Ice Cream topped with Coconut Jelly, Gula Melaka Granite, Red Beans and Sweet Corn will be served in a whole Coconut husk. In commemoration of the nation’s iconic drinks, guests will also be treated to unlimited servings of the Singapore Sling Sorbet, Coconut Gelato and Milo Gelato.
These decadent afternoon tea treats are perfectly complemented with two beverages of fine loose-leaf tea or coffee, along with unlimited uniquely crafted English scones with Chicken Bak-Kwa.
It's never too early to raise a toast, celebrate the country’s 57 years of independence with The Lobby Lounge’s “Tropical Gem” Cocktail, a refreshing concoction curated by the talented in-house Mixologist Praveen Rai.
Inspired by the pioneer businessmen at the forefront of contributing to Singapore’s economy, namely, Lim Nee Soon also known as Pineapple King in the early 1900s – this drink is a mixture of Pineapple juice, Rum, Banana liqueur, Lemon juice and Simple syrup; served with a side of nostalgia in the form of iced gem biscuits.
An up and rising culinary star at InterContinental Singapore is Sous Chef Sherine Lim who has been with the hotel since 2019.
Driven by her passion to present guests with an experiential dining experience, Chef Sherine “reverted” her favourite local delight – Laksa to the way she remembers eating when growing up – with the thick rice noodles cut into short strands so one can easily scoop all the ingredients and enjoy the myriad of flavours and texture in every bite.
This spicy coconut dish includes a generous serving of handmade fish noodles and finest seafood such as Poached Boston lobster and mussels. Guests can also opt to add on a hot cup of Lemongrass Infused Tea with Barley and Mint, as a digestif after the indulgent meal.
From 1 to 9 August 2022, an impressive four-course National Day Set Lunch Menu, curated by Executive Chinese Chef Aaron Tan awaits at Man Fu Yuan. Be greeted with a series of dashing dishes prepared with a local flair including appetisers like the Wok-Fried Pork Ribs with Pineapple Salsa and Satay Sauce; Poached Chicken with Green Ginger Pesto; and Deep-Fried Prawn with Curry Leaf, Mint Yogurt and mains such as Steamed Seabass Fillet with Spicy Nyonya Sauce.
At the hotel's latest Italian Bistronomic concept, LUCE by Davide Giacomelli – Restaurant Manager and Sommelier, Artem Viglione has in store a tropical cocktail – LUCE Salute for his guests. Decked in the colours of the Singapore National flag, this fruity beverage pays tribute to the vibrant garden city with a concoction of Gin, Lychee liqueur, Rose and Lemon juice topped with a bubbly smooth foam.
From 6 to 9 August, in-house guests are treated to an indulgent Heritage Wine Pairing Bundle which consists of a bottle of sparkling Prosecco Pizzolato and all-time favourite local delight, Satay Panggang. They may choose to enjoy it by the pool or in the comfort of their own rooms.
