But first, what is a rice dumpling/bak zhang?

Bak chang is the Hokkien name for a glutinous rice dumpling, which is made by encasing meat (bak) in a dumpling (zhang). Also spelt as bak chang, it is then wrapped in a bamboo leaf and either steamed or boiled.
